- Prepare 4 tbsp Mustard oil

- Take a Bharta Baigan/ Brinjal. Choose it wisely and take a soft baingan / brinjal without any holes in it. Grease it well with oil.
- Now place a rack over the flame and cook the baigan/brinjal on all sides equally. Let the outer skin burn properly and turn it in equal intervals to avoid it from excess burning.
- Let it cool for a while and remove the skin of the baigan/brinjal and with the help of fork mash it properly.
- Now in a pan add mustard oil (you can take any variety as per your choice) and then add jeera and mustard seeds, when it is heated properly. Mix it for a while.
- Now add ginger garlic paste and green chillies and mix well. Then add onions to it.
- Add salt to the onion. It helps in faster cooking of onion. And mix well. Also, add a pinch of hing.
- Now add coriander powder, red chilli powder, turmeric powder and garam masala to it. Mix well and then add desi tomatoes to it. Desi tomatoes give a sour taste to it.
- Now cover and cook the tomatoes for about 4-5 minutes. It may take more time in some cases.
- When the tomatoes are cooked properly add your mashed baigan to it and mix well.
- Cover and cook for about 4 to 5 minutes again so as to cook it properly. Then garnish with coriander leaves.
