  2. Take boiled potatoes peeled & cut into pieces
  3. Get mustard seeds
  4. Prepare khus-khus/poppy seeds
  5. Get medium onion (sliced)

  7. Get Mustard oil
  8. Prepare sugar (optional)
  9. Prepare kalonji

Instructions to make Bhindi Shorshe/Sarson:
  1. In a small bowl add mustard seeds and poppy seeds. Add 2 tbsp of water to it and soak it for about half an hour. Then add the same in a mixing jar, add half sliced onion to it & blend it into a smooth paste. Keep this mixture aside.
  2. Now wash and cut the lady-fingers into pieces, as shown in the image below. Take some mustard oil in a pan heat it then fry the bhindi till 80 percent. Add some salt while frying. Remove it from the pan & keep it aside.
  3. Now in the same pan add some oil, remember to use only mustard oil for any Bengali authentic dish. Then add some kalounji to it. Let it splutter a bit then add remaining half onion, sliced, chopped green chillies and fry it half-way.
  4. Then add the boiled potato pieces to it. Fry them for about 2 to 3 mins. Then add fried bhindi to it. Mix everything well & fry them for 2 more mins.
  5. Then add the mustard-poppy seeds paste to it and gently give everything a good mix. Add some salt as per your taste & sugar at this point of time. Cook it on a low flame for 3 more mins. At last add a tsp of mustard oil, chopped coriander leaves and give it a gentle mix.
  6. Your Bhendi Shorshe is now ready to serve. Enjoy it with some steamed rice.
