Steps to make Sweet and sour Tomato and orange chutney:
- First, soak the tamarind for at least an hour in warm water, once soaked, mix it with a hand and strain it. Soak the dates and raisins too. Dry roast some whole Cumin and coriander seeds and grind them into powder.
- Wash and chop the tomatoes, with the help of zester or zest peeler, zest the orange and separate the fruits from the pith and discard the seeds (if any).
- In a frying pan heat mustard oil and pinch & add whole dry red chilli and Paanch Foran. Once it crackes add the chopped tomatoes, stir it for one or two minutes
- Add Kashmiri Lal mirch powder, Turmeric powder, black rock salt and salt as per taste and mix well.Add about 1/2 cup water cover and cook for about 5 minutes.
- Then add ginger powder, raisins and dates along with the soaked water (about 1/2 cup) orange zest and mix well and cook for about 3-5 minutes.
- Add chilli flakes and the strained tamarind pulp and cook for another 3 mins or so. Add little water if required.
- Then add the jaggery and mix well and cook for about 3 minutes or so and then add the prepared orange fruit and mix well gently. Cook for about 5 minutes. At the end sprinkle the roasted Cummin and coriander powder & mix well. Your chutney is ready. Bon Appetit!!!!
